If your calendar for the end of January is looking a little… beige, St. Joseph’s Catholic Church & School has just the thing to splash it with color, food, and a whole lot of fun. The 75th Annual Mardi Gras celebration is rolling into town on January 31st and February 1st, 2026, and it’s shaping up to be a weekend where stretchy pants are not just encouraged — they’re practically required.

Saturday at St. Joseph’s: Slushburgers, Bingo, and an All-Day Fun

Let’s start with Saturday. Doors open at 11:00 a.m. and things don’t slow down until 7:00 p.m. The star of the day is the legendary slushburger meal, which includes pie and coffee for just $6. That alone is reason enough to show up hungry. Add in a bake sale in O’Neill Hall, game booths running all day, a live auction at noon, and bingo kicking off at 4:00 p.m., and suddenly your “quick stop” turns into an all-day event. Everything takes place in the St. Joseph’s school gym and O’Neill Hall, so you can bounce from activity to activity without ever stepping outside.

Then comes Sunday - the grand finale. From 11:00 a.m. to 6:00 p.m., the action ramps up with the beloved annual roast beef dinner. Adults eat for $15, seniors (65 and older) get a break at $12, kids ages 6–11 eat for $8, and children 5 and under eat free. Prefer to enjoy your roast beef at home? Take-outs are available until 5:30 p.m.

Sunday’s Grand Finale: Roast Beef, Family Fun, and Fun

Sunday also brings a silent auction from noon to 4:00 p.m., a cake walk at 11:00 a.m., cards of chance at noon, game booths until 4:30 p.m., and cash drawings at 6:00 p.m. Translation: there’s always something happening, and there’s always a chance you’ll leave with cake, cash, or bragging rights.

This isn’t just a fundraiser, it’s a Williston tradition 75 years strong, packed with community spirit, good food, and the kind of fun that keeps people coming back year after year. So grab your friends, bring your appetite, and come celebrate Mardi Gras the St. Joseph’s way, where everyone leaves full, happy, and already planning next year.
